<p><strong>Ingredients:</strong></p>
<p>Per al <strong>iogurt de llet de cabra</strong> (per a 7 iogurts):</p>
<ul>
<li>500 cc de llet de cabra</li>
<li>300 cc llet de vaca</li>
<li>100 cc nata líquida</li>
<li>1 iogurt de llet de vaca senser</li>
</ul>
<p><strong>Per la melmelada:</strong></p>
<ul>
<li>Un pot de melmelada de tomàquet</li>
</ul>
<p><strong>Elaboració:</strong></p>
<p><strong>Pel iogurt:</strong></p>
<p>Posem a bullir la llet de vaca, de cabra i la nata líquida, un cop ha bullit ho deixem refredar fins als 40 ºC, quan arribi aquest punt li barregem el iogurt i el posem a la iogurtera, el deixem fer entre 10 i 12h. Passat aquest temps el posem a la nevera un mínim de 2h.</p>
<p>La melmelada en aquest cas l&#8217;he comprat, no tenia temps de fer-la.</p>
<p>El montatge el fem en un got o en una copa, posem una mica de iogurt, una mica de melmelada i anem fent capes fins que acabem amb melmelada de tomàquet.</p>

<p><em>&#8220;És de ressaltar que fins i tot a l&#8217;arribada del tomàquet i del pebrot a  terres espanyoles, els primers gaspatxos no posseïen tomàquet i pebrot i  això es pot veure en el <a title="Llibre de  cuina" href="http://ca.wikilingue.com/es/Llibre_de_cuina">receptari</a> de <a title="Juan de la Mata de Morella" href="http://ca.wikilingue.com/es/Juan_de_la_Mata_de_Morella">Juan de la Mata de Morella</a> de <a title="1791" href="http://ca.wikilingue.com/es/1791">1791</a> titulat &#8220;<em>Art  de Reposteria</em>&#8220;. Si es mira sota aquesta perspectiva, l&#8217;entrada  &#8220;gaspatxo&#8221; en el <em>«Tresor de la llengua castellana o espanyola»</em> de  Covarrubias,<sup id="cite_ref-Cov_12-3"><a href="http://ca.wikilingue.com/es/Gaspatxo#cite_note-Cov-12">[13]</a></sup> es pot entendre que el gaspatxo és una sopa simple i tosca espessida  amb pa. La mateixa rusticidad i l&#8217;absència dels ingredients moderns es  troba en el <em>«Diccionari d&#8217;Autoritats»</em> (1726).&#8221;</em></p>
<p>Aquesta recepta està extreta (en part) del llibre &#8220;Verrines simplissimes à l&#8217;Agar-agar&#8221; de Leduc Editions. La part extreta es la del <strong>crocant d&#8217;olives</strong>, la part del <strong>gaspatxo</strong> es una variació meva de la recepta tradicional. Jo no hi poso ceba i afegeixo la pastanaga, que normalment no es fa, però a mi m&#8217;agrada més.</p>
<p><strong>Preu aproximat per ració: 0,42 €<br />
</strong></p>
<p><strong>Ingredients (6 persones) pel gaspatxo:</strong></p>
<ul>
<li>1 <strong>pebrot verd</strong></li>
<li>1 <strong>pebrot vermell</strong></li>
<li>5 <strong>tomàquets</strong> madurs</li>
<li>1 <strong>cogombre</strong></li>
<li>2 <strong>pastanagues</strong></li>
<li>2 dents <strong>d&#8217;all</strong></li>
<li>un crostó de <strong>pa sec</strong></li>
<li>1/2 litre d&#8217;aigua</li>
<li>100 cc <strong>oli d&#8217;oliva</strong></li>
<li>el suc d&#8217;una <strong>llimona</strong></li>
<li>sal</li>
<li><strong>vinagre de vi blanc</strong> (al gust)</li>
</ul>
<p>Ingredients <strong>(6 persones) </strong>pel <strong>crocant d&#8217;olives negres:</strong></p>
<ul>
<li>14 <strong>olives negres</strong></li>
<li>130 gr de <strong>farina blanca</strong></li>
<li>4 cullerades d&#8217;<strong>oli d&#8217;oliva</strong></li>
<li><strong>pebre</strong> en pols</li>
</ul>
<p><strong>Elaboració:</strong></p>
<p>Triturem tots els ingredients del gaspatxo (havent pelat els tomàquets), amb l&#8217;aigua i si tenim pressa hi posem glaçons. Ho triturem ben fi, que no quedin pells o grumulls. Ho reservem a la nevera.</p>
<p>Per a la massa del <strong>crocant d&#8217;olives</strong>:</p>
<p>Triturem les <strong>olives negres</strong> ben petites, (en el meu cas les he tallat), barregem amb <strong>farina</strong>, <strong>oli</strong> i la <strong>pebre</strong>.</p>
<p>Ho pastem be i ho posem sobre un paper de coure, ho estirem be amb un corró i li posem un altre paper a sobre, ho deixem ben llis, abans d&#8217;enfornar li fem uns talls com si fossin crackers. Ho posem al forn que prèviament hem escalfat a 200 ºC.</p>

<p>Com que no volia comprar alberginia, la vaig substituir per <strong>mousse d&#8217;anxova i parmesà,</strong> el resultat molt divertit, amb color i un gust molt suau.</p>
<p>Les anxoves les he preparat jo al juny i al desembre ja es podien tastar. Un altre dia us en posaré la recepta, son genials de menjar i és emocionant veure com es transforma.</p>
<p><strong>Preu </strong>(cada unitat)<strong>:</strong></p>
<ul>
<li>0,79 €</li>
</ul>
<p><strong>Ingredients</strong> (per a 6 gots):</p>
<p style="padding-left: 30px;">Per la <strong>gelatina de tomàquet escalivat</strong>:</p>
<ul>
<li>10 <strong>tomàquets </strong>de Canàries</li>
<li>1 cullerada i 3/4 d&#8217;<strong>agar agar</strong> (alga per espessir)</li>
</ul>
<p style="padding-left: 30px;">Per la <strong>mousse d&#8217;anxova i parmesà:</strong></p>
<ul>
<li>8-9 anxoves</li>
<li>30 gr de nata</li>
<li>1 culleradeta d&#8217;<strong>agar agar</strong></li>
<li>1 clara d&#8217;ou a punt de neu</li>
<li>50 gr de formatge parmesà</li>
</ul>
<p><strong>Elaboració</strong>:</p>
<p>Aquesta recepta és senzilla de fer, primer <strong>escalivem els tomàquets,</strong> els posem en una safata al forn, que haurem escalfat abans a 200 º C, durant uns 50 minuts, depen del tamanys dels tomàquets.</p>
<p>Quan siguin cuits, els treiem del forn i els pelem i triturem ben fi, treient les llavors del tomàquet.</p>
<p>Posem en un cassó el liquid resultant, i posem l&#8217;alga Agar agar, ho fem bullir uns 6-8 minuts, anem remenant per tal que quedi ben fi. Passat aquest temps ho posem en gots mirant que quedin nivellats.</p>
<p>Per fer la <strong>mousse d&#8217;anxova i parmesà,</strong> batem una clara d&#8217;ou a punt de neu, i quan sigui ben ferma li afegirem les anxoves triturades amb la nata i el parmesà, ho barregem amb compte que no ens baixi la barreja.</p>
<p>En un cassó posem a bullir amb mig got d&#8217;aigua la culleradeta d&#8217;agar agar, ben barrejat, bullim 3-4 minuts, ho afegim a la barreja anterior i remenem be, ho posem en els gotets.</p>
<p>Per finalitzar posem una anxova a la part superior i ho reservem 8h a la nevera.</p>

<p><strong>Ingredients:</strong></p>

<li>1 xupito de pacharan</li>
<li>sal</li>
<li>2 cullerades de quetxup</li>
</ul>
<p><strong>Elaboració:</strong></p>
<p>Triturem el tomaquet amb el suc de llimona, el xupito, el sucre, la sal, el quetxup i una cullerada de clara d&#8217;ou semimontada. Quan sigui ben tritutat i fi ho posem a la geladora i deixem que faci el sorbet.</p>
<p>Ho servim en copes.</p>
<p><strong>Truc:</strong></p>
<p>Si poseu les copes mentre fem el gelat, al congelador, quan servim el sorbet aquest no es desfarà al contacte amb la copa.</p>
<p>En aquest cas he usat copes de plàstic, em fa una mica de cosa usar les de vidre o cristall. Encara que molts cops ho he fet.</p>
