<p>Aquest postre se&#8217;m va ocorre després de fer el <a title="Got de gelatina amb iogurt de soja, mango i maduixes" href="http://www.llepadits.com/?p=1309" target="_self"><strong>got de Gelatina de mango i iogurt</strong></a> i de la <a title="Tarta sacher, taller de pastisseria del Museu de la Xocolata" href="http://www.llepadits.com/?p=1085" target="_self"><strong>Tarta Sacher.</strong></a> Sempre m&#8217;han agradat els postres cremosos amb fruita i diferents capes.</p>
<p>He utilitzat la <a title="base biscuit Tarta Sacher" href="http://www.llepadits.com/?p=1085" target="_self">base del biscuit de la <strong>Tarta Sacher</strong></a> per a fer la base d&#8217;aquest semifred.</p>
<p><strong>Preu aproximat per ració: </strong>0,77 €</p>
<p><strong>Ingredients:</strong></p>

<li>4 clares d&#8217;ou</li>
<li>1 mango madur</li>
<li>2 cullerades de sucre</li>

<p>Preparem la <a title="Base de Tarta Sacher" href="http://www.llepadits.com/?p=1085" target="_self">base de la <strong>Tarta Sacher</strong></a>, i la congelem, amb un motlle rectangular tallem una porció i la posem a la base d&#8217;aquest motlle. A sobre posem una barreja preparada amb:</p>
<ul>
<li>Les 4 clares d&#8217;ou a punt de neu. Li afegim al final 2 cullerades de sucre.</li>
<li>Apart posem el mango a talls amb el sucre amb un cassó fins que el mango està ben cuït, al final li afegim l&#8217;agar agar ho remenem be que es disolgui be i la deixem refredar.</li>
<li>Triturem la barreja del mango i el sucre amb un turmix, i hi afegim el iogurt grec. Aquesta barreja l&#8217;afegim a les clares anant amb compte que no es baixin. Ho repartim a sobre del biscuit i deixem un espai fins a la vora del motlle. Ho posem tot a la nevera que qualli durant 6 &#8211; 8h.</li>
<li>Escalfem la cobertura de cacao de la Tarta Sacher fins als 40 ºC i la posem a sobre del semifred. Ho posem al congelador sino no es pot desmotllar.</li>
<li>Ho treiem del congelador 40 minuts abans de servir.</li>
<li>Posem una maduixa tallada a trossos per sobre.</li>

<p>Hola&#8230; feia molt temps que volia fer aquesta tarta, però no trobava mai el moment. Fa aproximadament un any varem anar una colla de blocaires al <a title="Museu de la Xocolata" href="http://pastisseria.cat/ct/PortadaMuseu" target="_blank"><strong>Museu de la Xocolata</strong></a>, on varem assistir al <a title="Taller de pastisseria en miniatura Museu de la Xocolata" href="http://lacuinadecasa.blogspot.com/2009/02/taller-de-pastisseria-en-miniatura-al.html" target="_blank"><strong>Taller de Pastisseria en Miniatura</strong></a>.</p>
<p>El <strong>Museu de la Xocolata </strong>te a dins l&#8217;<strong>Escola del Gremi de Pastisseria</strong>, tot un luxe per a nosaltres! aquest dia ens van ensenyar com fer un <strong>Brownie de xocolata</strong> i la <strong>Tarta Sacher.</strong></p>
<p>A mi el Brownie m&#8217;enbafa bastant, però la <strong>Tarta Sacher</strong> que ens van ensenyar és molt flonja i no porta res de mantega <img src='http://www.llepadits.com/wp-includes/images/smilies/icon_smile.gif' alt=':-)' class='wp-smiley' /> !</p>
<p>Com totes les coses bones te el seu truc, intentaré explicar-los per a que quedi clar.</p>
<p><strong>Preu aproximat per ració: </strong>1,24 €</p>
<p><strong>Ingredients (per 4-6 persones):</strong></p>
<p>Per al <strong>pastís</strong>:</p>
<ul>
<li>113 gr. de clares d&#8217;ou</li>
<li>125 gr. de sucre</li>
<li>160 gr. de rovells d&#8217;ou</li>
<li>37 gr. de <strong>cacau</strong> amarg en pols</li>
<li>16 gr. d&#8217;ametlla en pols</li>
<li><strong>melmelada de gerds</strong> (uns 200 gr)</li>
</ul>
<p>Per la <strong>cobertura</strong>:</p>
<ul>
<li>33 gr. aigua mineral</li>
<li>240 gr. de sucre</li>
<li>160 gr. de nata</li>
<li>50 gr. de <strong>cacau</strong> amarg</li>
<li>3 unitats i 1/4 de fulles de gelatina</li>
</ul>
<p>Aquest pastís l&#8217;hem de començar a fer per la cobertura, ja que te que reposar mínim 6h abans d&#8217;usarla. Després ja seguirem per la base i el farcit.</p>
<p><strong>Elaboració cobertura:</strong></p>
<p>Posem a bullir l&#8217;aigua, sucre, nata i afegim el <strong>cacau</strong>, ho barregem be amb ajuda d&#8217;un turmix, ha de quedar ben barrejat i sense grumulls. Mentrestant hidratem els fulls de gelatina amb aigua freda, les dissolem amb la barreja anterior. Ho deixem reposar a la nevera 6h com a mínim.</p>
<p><strong>Elaboració base del pastís o planxa:</strong></p>
<p>Posem a escalfar el forn a 250ºC i mentrestant montem a punt de neu les clares, quan estan una mica fermes afegim el sucre. Per últim afegim els rovells i el cacau tamizat i l&#8217;ametlla en pols.</p>
<p>Ho posem en una llauna forrada amb paper de coure:</p>

<p>Ho posem al forn durant 6-7 minuts a 250ºC, vigilar que no es cremi. Quan sigui cuïta la deixem refredar. Un cop freda la posem al congelador, amb llauna i tot, sino no la podrem tallar be.</p>
<p>La treiem del congelador, medim la llargaria del pastis i la dividim en 3 parts iguals.</p>

<p>La desmotllem i anem posant els pisos sobre una reixeta de <strong>pastisseria</strong> o del forn, posem un pis i a sobre la <strong>melmelada</strong> <strong>de gerds</strong> en una capa molt fina, a sobre un altre pis de base o planxa i seguim amb la melmelada, fins tancar.</p>

<p>Escalfem a 40º C la <strong>cobertura</strong> que haviem guardat a la nevera, la posem per sobre que cobreixi be. La servim en una safata i cap a la nevera. Es millor d&#8217;un dia per l&#8217;altre.</p>
