4 raps petits sencers<br />

<p>All i oli</p>
<p>Es treu la pell del rap i les dents i es deixen sencers. Es bullen les patates senceres amb pell.</p>
<p>Es passa el carbassó per la planxa i el deixem rosset i marcat.</p>
<p>Es fa un all i oli amb 2 dents d&#8217;all a les que s&#8217;haurà tret l&#8217;ànima, 200 cc d&#8217;oli, un rovell d&#8217;ou, 1 cullerada d&#8217;oli i 1 de vinagre de vi blanc, amb el turmix el montem.</p>
<p>Es fa el rap a la planxa, procurant que quedi tot ben cuït, es serveix immediatament.</p>
<p>Es un plat molt senzill i bo alhora, el rap omple molt i amb la verdura i all i oli es un plat molt complet.</p>

<p>Va de maduixes&#8230; es veu que es començar i no parar&#8230; jeje, com suposo que veieu ara n&#8217;és la temporada i estàn boníssimes!</p>
<p>Ingredients:</p>
<p>300 gr de maduixes<br />
Vinagre de mòdena<br />
40 gr de sucre</p>
<p>Elaboració:<br />
Es netegen i tallem la part verda de les maduixes, es talla a trossos petits en un recipient, a sobre posem el sucre i el vinagre, unes gotetes i ho remenem be que quedi ben repartit. Es deixa reposar un mínim de 3h a la nevera.</p>
<p>Ho servim en copes, i si es vol podem posar iogurt per sobre.</p>

<p>Com que estem en la temporada de les maduixes, en vaig comprar bastantes, i les he fet de diferents maneres, aquesta es una recepta light, apta per les persones que volem guardar la línia per abans de l&#8217;estiu.</p>
<p><strong>Ingredients:</strong> (per 12 unitats)</p>
<p>250 g de mató<br />
500 g de maduixes</p>
<p>½ l. de llet<br />
100 g de sucre<br />
4 fulles de gelatina<br />
4 clares d&#8217;ou</p>
<p><strong>Elaboració:</strong></p>
<p>Netejar les maduixes, treure la part verda i blanca, posar en un turmix i triturar fins que quedi fi.</p>
<p>Posar les clares a punt de neu. Mentrestant posar les fulles de gelatina amb aigua freda durant 4 minuts. Afegir el sucre a les maduixes i el mató, afegir la llet menys un got, remenar be fins que quedi ben desfet.</p>
<p>Posar el got de llet reservat amb les fulles de gelatina desfetes al foc, ho batem be fins que estigui desfet, no ha de bullir només calent.</p>
<p>Barrejar la gelatina amb les maduixes, sucre i llet, posar aquesta barreja al bol on hem pujat les clares a punt de neu, suaument sense remenar molt, per a que no perdi volum.</p>
<p>Ho distribuïm en copes i ho posem a la nevera.</p>

<p><strong>Per a la crema:</strong><br />
300 gr de pomes<br />
300 gr de peres (conference, leclerc&#8230;)<br />
8 nous de macadamia<br />
1 persimó</p>
<p><strong>Elaboració</strong></p>
<p>Es pelen i tallen a trossos les pomes i les peres, les posem en un recipient per poder anar al microones. Li posem un polsim de sucre per sobre, ho deixem coure uns 10 min a màxima potencia.</p>
<p>Ho passem per la trituradora i ho deixem refredar. Tallem el persimó a llesques, li posem sucre per sobre  i ho posem amb paper sulfuritzat al forn, 10 min a 200 ºC. Mentrestant posem el puré de poma i pera en copes de postres, en aquest cas he posat plats. Ratllem la macadamia a sobre i ho decorem amb el persimó.</p>

<p>Es posa a sofregir amb una cullerada d’oli d’oliva la ceba ben trinxada. En una altra cassola (més aviat plana) posem el bonítol i el cobrim amb llet, ho posem al foc i esperem que bulli, quan sigui cuit ho traiem del foc i ho deixem refredar una mica, quan sigui a una temperatura suau, traiem les espines i la pell i ho reservem apart. Quan la ceba sigui cuita, hi afegim el bonítol i remenem trinxant-ho tot.</p>
<p>Afegim la farina i remenem una mica més. Quan sigui lligat afegim la llet de la cocció i remenem, ha de quedar una textura suau. Afegim el ou i remenem be, afegim la sal i la pebre al gust.</p>
<p>Un cop quedi lligat ho traiem del foc i ho deixem reposar.  Fem la massa del <strong>braç de gitano</strong> de la següent manera; batem 3 clares a punt de neu, afegim un rovell i mig a les clares, afegim la farina i el llevat. Ho remenem suaument per a que no baixin les clares, afegim la sal al últim moment.</p>
<p>Ho posem en un motlle rectangular al forn a una temperatura de 160 ºC, durant 12 minuts. Passat aquest temps ho traiem del forn i li posem immediatament un drap de cotó humit a sobre.</p>
<p>Desenganxem el paper vegetal i li donem la volta. A sobre del braç hi posem el farciment que hem fet i amb compte ho enrotllem, ho posem a refredar a la nevera.</p>
<p>Per servir-ho hi posem uns créixens per acompanyar banyats amb una mica de Vinagre de Mòdena.</p>

<p><strong>Per a la massa de cracker:</strong></p>
<ul>

<li>Llom de bonítol fresc</li>
<li>seitons nets sense cap</li>
<li>Albergínia escalivada</li>
<li>Formatge emmental ratllat</li>
<li>Pipes de carbassa</li>

<p><strong>Elaboració:</strong></p>
<p>Es fa una massa que tingui textura com de pa, i amb un corró s’estén i se&#8217;n fa una capa fina de 2-3 mm de gruix. Amb un got del revés tallem a porcions (rodonetes) la pasta.  De la rodona resultant la tornem a passar pel corró fins que quedi molt fina, de 1mm de gruix aproximadament.</p>
<p>Anem posant aquestes làmines a una plata de forn folrada amb paper vegetal (de cuinar).  Un cop disposades les làmines salpebrem cada làmina generosament. A sobre hi posem el bonítol a trossets allargats (sense pell ni espines).</p>
<p>Al costat del bonítol hi posem les albergínies escalivades sense pell, i una mica més enllà el seitó.  Posarem com a final el formatge ratllat per sobre cobrint-ho generosament.</p>
<p>Com a últim ingredient hi posem les pipes de carbassa.  Posem a escalfar el forn a 200 ºC, ho deixem coure uns 10-12 min. fins que veiem que la galeta està cuita però no cremada.</p>
<p>Està bo calent i fred, va molt be acompanyar-lo d&#8217;una amanida d&#8217;enciam.</p>
