<p>Cada vegada m&#8217;agrada més la cuina mini, les <strong>mini tartaletes,</strong> les mini verdures, com més petit millor&#8230; En fi son deries suposo, i dins d&#8217;aquestes deries, un postre que el pots pendre amb els dits sempre es divertit.</p>
<p>Fa temps vaig sentir unes declaracions d&#8217;experts en màrqueting de producte de Panrico en el que deien que havien detectat que els nens veien molta tele i que si quedaven amb amics era per jugar a l&#8217;ordinador, això va fer que innovessin creant els Donetes, que es poden agafar amb una sola ma i no et dones compte que te&#8217;ls menges tots. Doncs aquí el mateix, aquest es un postre de sobretaula per anar picant&#8230;</p>
<p><strong>Preu aproximat per safata de 48 tartaletes:</strong> 8,3 € ó 0,17 € per tartaleta</p>
<p><strong>Ingredients per a 48 tartaletes:</strong></p>
<ul>
<li>48 bases de tartaletes mini</li>
<li>1/2 l Crema <strong>pastissera</strong></li>
<li>16 <strong>gerds</strong></li>
<li>8 <strong>maduixes petites<br />
</strong></li>
</ul>
<p><strong>Elaboració:</strong></p>
<p>Preparem la <a title="Recepta de crema pastissera" href="http://www.llepadits.com/2010/03/bunyols-de-vent-farcits-de-crema-una-delicia-de-la-quaresma/">crema pastissera, aquí en teniu una recepta fàcil</a>, i la deixem refredar una mica.</p>
<p>Tallem les <strong>maduixes</strong> per la meitat.</p>
<p>Emplenem les tartaletes amb la <strong>crema</strong> fins que arribi a la vora.</p>
<p>Posem a escalfar una pala per a cremar la <strong>crema</strong>, en el meu cas no disposo de bufador, sino una pala elèctrica que va molt be però no te els acabats fins del bufador.</p>

<p>Posem sucre per sobre la crema i la cremem, fem aquesta operació amb la màxima ventilació possible, ja que el sucre fa molt de fum quan crema.</p>
<p>En aquest cas només vaig cremar les tartaletes que anaven sense fruita i la petició de la familia va ser perquè no les cremaves totes? o sigui que segons els gustos de qui les tasti feu una cosa o una altra.</p>

<p>Aquesta recepta és de les meves preferides, son <strong>bunyols de vent</strong>, tipics de l&#8217;època de <strong>Quaresma</strong>. Son flonjos  i al anar farcits de crema fa que siguin molt suaus i alhora esclatants.</p>
<p>La recepta del <strong>bunyol</strong> és d&#8217;en <a title="Blog RAC1, Fermí Puig" href="http://rac1.org/elmon/blog/fidels-a-la-quaresma/" target="_blank">Fermí Puig</a> i la <strong>crema</strong> és de la Gemma de <a title="La cuina de casa" href="http://lacuinadecasa.blogspot.com/2010/01/bunyols-de-vent-farcits-de-crema.html" target="_blank">La Cuina de casa</a> amb una petita modificació meva.</p>
<p><strong>Preu aproximat d&#8217;una safata entre 40 i 50 unitats: </strong>2,05 €</p>
<p><strong>Ingredients de la massa del bunyol:</strong></p>
<ul>
<li>1/4 de l. d’aigua</li>
<li>25 gr. de mantega</li>
<li>Sal</li>
<li>100 gr. de farina</li>
<li>3 ous</li>
</ul>
<p><strong>Elaboració bunyols de vent:</strong></p>
<p>Aboquem 1/4 de litre d’aigua, 25 grams de mantega i un puntet de sal en un cassó. Quan l’aigua bull, baixem la intensitat del foc i hi tirem 100 grams de farina. Remenem i traiem el cassó del foc. Quan la barreja comença a refredar-se, tornem a posar el cassó al foc i, un per un, anem tirant els tres ous que tenim preparats. La massa per fer els bunyols de vent ja està llesta!</p>
<p>Posem un cassó amb oli d&#8217;oliva i oli de girasol, ha d&#8217;estar calent quan hi tirem la massa dels bunyols. Amb una cullera anem tirant boles a la cassola amb oli, les coem fins que veiem que son rosses i rodones. Un cop son cuites les posem amb paper absorbent per treure l&#8217;exces d&#8217;oli que tenen.</p>
<p>En aquest punt he afegit un pas, un cop ja hem tret l&#8217;excés d&#8217;oli posem mig got amb anís i amb ajuda d&#8217;un pinzell li fem una pinzellada als <strong>bunyols</strong> i els deixem reposar.</p>

<p><strong>Ingredients </strong><strong>Crema pastissera</strong><strong>:</strong></p>
<ul>
<li>1/2 l. de llet</li>
<li>4 rovells d’ou</li>
<li>100g de sucre</li>
<li>40g de maizena</li>
<li>canyella</li>
<li>pell de llimona</li>
</ul>
<p>Jo hi he afegit <strong>pell de taronja</strong>, li dona una aroma perfumada i cítrica molt bona.</p>
<p><strong>Preparació: </strong></p>
<p>Dissoldre la maizena en un rajolí de llet freda.<br />
En un cassó al foc, posar la resta de la llet amb el sucre, la canyella, la pell de llimona i la pell de taronja. Quan arrenqui el bull, treure del foc i deixar refredar una mica.<br />
A part, barrejar els rovells amb la maizena. Afegir la llet ja temperada, barrejar i colar. Tornar a posar la crema al foc, remenant sense parar. A la que arrenqui a bullir, treure del foc i deixar refredar.</p>

<p>Amb ajuda d&#8217;una mànega farcim els <strong>bunyols</strong> fins que veiem que son plens.</p>
<p>Els posem un polsim de sucre llustre per sobre i a gaudir!!</p>

<p>Fa uns dies em varen convidar des de <strong>Unilever</strong> (Knorr) a la presentació d&#8217;uns <a title="Video de cacitos Knorr" href="http://www.youtube.com/watch?v=HqF0a_3a7IYncuentro" target="_blank">cacitos de caldo</a> per part del cuiner <strong>Jordi Cruz</strong> a l&#8217;Illa Diagonal.</p>
<p>Allà ens varem trobar amb en <a title="De cuina" href="http://decuina.blogspot.com/" target="_blank">Manel</a> i en <a title="Cuina amb Compte" href="http://www.ambcompte.net/cuina/" target="_blank">Roger</a>. Tots veniem pensant que poca cuina veuriem amb els cacitos. La sorpresa va ser per tots igual, doncs en <strong>Jordi Cruz</strong> és un molt bon cuiner, i el producte te molta qualitat també.</p>
<p>En <strong>Jordi Cruz</strong> ens va fer un seguit de receptes, amb els cacitos, que varem comprovar que era boníssim i ens varem quedar amb ganes de provar-ho.</p>

<p><span id="result_box"><span title="Picamos la cebolleta y la sofreímos ligeramente en una cazuela amplia con la mitad del aceite." onmouseover="this.style.backgroundColor='#ebeff9'" onmouseout="this.style.backgroundColor='#fff'">Piquem la ceba tendra i la sofregim lleugerament en una cassola gran amb la meitat de l&#8217;oli. </span><span title="En un bol, introducimos 2 litros de agua, una cucharada de harina y dos ramas de perejil rotas," onmouseover="this.style.backgroundColor='#ebeff9'" onmouseout="this.style.backgroundColor='#fff'">En un bol, introduïm 2 litres d&#8217;aigua, una cullerada de farina i dues branques de julivert trencades, </span><span title="este baño nos servirá para evitar la oxidación de las alcachofas." onmouseover="this.style.backgroundColor='#ebeff9'" onmouseout="this.style.backgroundColor='#fff'">aquest bany ens servirà per evitar l&#8217;oxidació de les carxofes. </span><span title="Retiramos las hojas exteriores" onmouseover="this.style.backgroundColor='#ebeff9'" onmouseout="this.style.backgroundColor='#fff'">Retirem les fulles exteriors </span><span title="de las alcachofas, retiramos el tallo dejando solo dos centímetros, cortamos las alcachofas por" onmouseover="this.style.backgroundColor='#ebeff9'" onmouseout="this.style.backgroundColor='#fff'">de les carxofes, retirem la tija deixant només dos centímetres, tallem les carxofes per<br />
</span><span style="background-color: #ffffff;" title="la mitad y ayudados de una cuchara, retiramos la pelusilla del centro." onmouseover="this.style.backgroundColor='#ebeff9'" onmouseout="this.style.backgroundColor='#fff'">la meitat i ajudats d&#8217;una cullera, retirem la borrissol del centre. </span><span title="Introducimos las mitades" onmouseover="this.style.backgroundColor='#ebeff9'" onmouseout="this.style.backgroundColor='#fff'">Introduïm les meitats </span><span style="background-color: #ffffff;" title="limpias en el baño de agua, para que no oxiden." onmouseover="this.style.backgroundColor='#ebeff9'" onmouseout="this.style.backgroundColor='#fff'">netes al bany d&#8217;aigua, perquè no s&#8217;oxidin. </span><span title="Una vez limpios los fondos, cortamos las" onmouseover="this.style.backgroundColor='#ebeff9'" onmouseout="this.style.backgroundColor='#fff'">Una vegada nets els fons, tallem les </span><span title="mitades a cuartos y las introducimos en la cazuela con la cebolleta." onmouseover="this.style.backgroundColor='#ebeff9'" onmouseout="this.style.backgroundColor='#fff'">meitats a quarts i les introduïm a la cassola amb la ceba tendra. </span><span title="Sofreímos a fuego" onmouseover="this.style.backgroundColor='#ebeff9'" onmouseout="this.style.backgroundColor='#fff'">Sofregim a foc </span><span style="background-color: #ffffff;" title="moderado hasta que la cebolleta tome un ligero tono dorado y las alcachofas estén medio" onmouseover="this.style.backgroundColor='#ebeff9'" onmouseout="this.style.backgroundColor='#fff'">moderat fins que la ceba tendra prengui un lleuger to daurat i les carxofes estiguin mig </span><span title="cocinadas." onmouseover="this.style.backgroundColor='#ebeff9'" onmouseout="this.style.backgroundColor='#fff'">cuinades. </span><span style="background-color: #ffffff;" title="Añadimos el vino blanco y dejamos reducir." onmouseover="this.style.backgroundColor='#ebeff9'" onmouseout="this.style.backgroundColor='#fff'">Afegim el vi blanc i deixem reduir. </span><span title="Mojamos con el agua y añadimos los" onmouseover="this.style.backgroundColor='#ebeff9'" onmouseout="this.style.backgroundColor='#fff'">Mullem amb l&#8217;aigua i afegim els </span><span title="dos cacitos de caldo vegetal Knorr." onmouseover="this.style.backgroundColor='#ebeff9'" onmouseout="this.style.backgroundColor='#fff'">dos cacitos de brou vegetal Knorr. </span><span style="background-color: #ffffff;" title="Dejamos cocer unos 10 a 15 minutos a ligeros borbotones." onmouseover="this.style.backgroundColor='#ebeff9'" onmouseout="this.style.backgroundColor='#fff'">Deixem coure uns 10 a 15 minuts a foc suau.</span></span></p>
<p><span title="Rectificamos de sal y pimienta." onmouseover="this.style.backgroundColor='#ebeff9'" onmouseout="this.style.backgroundColor='#fff'">Rectifiquem de sal i pebre. </span><span style="background-color: #ffffff;" title="Texturizamos la crema con la ayuda de un robot de cocina o un" onmouseover="this.style.backgroundColor='#ebeff9'" onmouseout="this.style.backgroundColor='#fff'">Texturitzem la crema amb l&#8217;ajut d&#8217;un robot de cuina o un </span><span title="túrmix, añadiendo a medio triturar, la mitad reservada de aceite de oliva." onmouseover="this.style.backgroundColor='#ebeff9'" onmouseout="this.style.backgroundColor='#fff'">túrmix, afegint a mig triturar, la meitat reservada d&#8217;oli d&#8217;oliva. </span><span title="Pasamos la crema" onmouseover="this.style.backgroundColor='#ebeff9'" onmouseout="this.style.backgroundColor='#fff'">Passem la crema </span><span title="por un colador fino y la reservamos hasta el momento de servir" onmouseover="this.style.backgroundColor='#ebeff9'" onmouseout="this.style.backgroundColor='#fff'">per un colador fi i la reservem fins el moment de servir.</span></p>

<p>Ja fa uns dies varem anar a una calçotada amb la familia i per postres vaig portar <strong>lioneses de crema</strong>, petitetes, per a que es podessin menjar amb una sola mà. És un postre senzill de fer i molt vistós. Després de calçots i botifarres el que et ve de gust és quelcom lleugeret i dolç. Van volar!</p>
<p>Son molt senzilles de fer, però la forma és potser el més complicat, jo vaig usar una màniga pastissera però sense boquilla.</p>
<p>Les vaig fer farcides de <strong>crema</strong>, que son més lleugeres que les de nata o trufa. Convé fer la crema abans per a que quan la volguem usar sigui freda o quasi freda.</p>
<p>La massa de la <strong>lionesa</strong>, &#8220;<strong>eclair</strong>&#8221; en francès, és la &#8220;<strong>pasta choux</strong>&#8220;, que també serveix de base als bunyols, la diferència és que les lioneses van al forn i els bunyols acaben fregits.</p>
<p>D&#8217;aquesta recepta en surten unes 120 <strong>lioneses</strong> aproximadament, perquè les faig petitones, son més agradables de menjar. La recepta és del llibre &#8220;Formulario Técnico de Pastelería-Panadería&#8221; de Pedro Llupia.</p>
<p>Amb els ingredients que poso surten unes 4 safates.</p>

<p><strong>Ingredients:</strong></p>

<li>4 rovells d&#8217;ou</li>
<li>1 l de llet</li>
<li>250 gr. de sucre</li>
<li>90 gr. de maizena</li>
<li>pell de llimona</li>

<li>per a la massa de la <strong>pasta choux:</strong>

<li>250 gr. d&#8217;aigua</li>
<li>200 gr. farina de rebosteria</li>
<li>250 gr. mantega</li>
<li>5 o 6 ous, depen del tamany</li>

<p><strong>Elaboració</strong>:</p>
<p><strong>De la crema:</strong></p>
<p>Posem la llet i el sucre a bullir amb la pell de la llimona, deixem apart un got de llet que desfarem amb la maizena, procurant que no quedi cap grumull. Quan la llet bulli, li afegim el got de llet amb la maizena i ho barregem be, abaixem el foc i no deixem de remenar, quan veiem que ja lliga ho treiem del foc i deixem refredar.</p>
<p><strong>De la pasta choux:</strong></p>
<p>Posem en un cassó l&#8217;aigua i la mantega, fins que bulli l&#8217;aigua i la mantega sigui fosa, li afegim la farina que haurem tamisat. I remenem sense parar, fins que faci bola. Treiem el cassó del foc i li anem afegint ous a la massa, ha de quedar lligada, afegim un i remenem i quan està lligat si està molt fort, vol dir que en pot admetre una altra.</p>
<p>Posem a escalfar el forn a 240 ºC dalt i baix, i amb l&#8217;ajuda d&#8217;una màniga pastissera anem formant boles petites i separades entre elles, les posem en un silpat i al forn, uns 7 minuts, fins que veiem que estàn doradetes i s&#8217;han inflat be.</p>
<p>Les treiem i deixem refredar, quan son fredes les obrim per la meitat i amb ajuda d&#8217;una altra màniga omplim les lioneses amb la crema. Han de quedar ben plenes.</p>
<p>Un cop plenes posem sucre llustre per sobre i a la nevera que reposin unes hores.</p>

<p>Aquest es un postre que feia anys que volia provar, però tenia por que quedés una mica empalagós, fort o massa pesant com a final d&#8217;un dinar de Nadal, i no ha estat així, ha quedat esponjós i fresquet, sobretot per la crema de llimona que porta a dins.</p>
<p>S&#8217;ha de fer en 3 fases:</p>
<ul>
<li>Primer el braç de gitano</li>
<li>Segón la crema de llimona</li>
<li>Tercer, la trufa al praliné</li>
</ul>
<p><strong>El braç de gitano:</strong></p>
<p>Per a fer-ho he utilitzat una recepta de Recetario de Sor Maria Isabel, &#8220;Los dulces de las monjas&#8221;, un llibre excel·lent.</p>
<p>Ingredients:</p>
<ul>
<li>150 gr. de sucre</li>
<li>150 gr. de maizena</li>
<li>5 ous</li>
<li>1 clara d&#8217;ou</li>
<li>1 llimona sensera ratllada</li>
<li>10 gr de sucre llustre</li>
<li>20 gr de llevat de reposteria</li>
</ul>
<p>Elaboració:</p>
<p>Posem a escalfar el forn a 160 ºC, ja que el procés és molt ràpid.</p>
<p>Barregem en un bol els rovells, el sucre, la llimona ratllada i ho batem ben fort.</p>
<p>En un altre bol (o robot) posem les clares a punt de neu, un cop ho estan, barregem les clares i els rovells però mirant que no s&#8217;abaixi la barreja i anem incorporant la farina i el llevat.</p>
<p>Ho posem en una placa de forn amb un paper antiaderent a sota, si es de silicona no cal untar amb mantega, si no ho és sí que cal.</p>
<p>Ho posem al forn durant 15 min. Mentres es fa, anem fent la crema de llimona.</p>
<p>Aneu en compte que no s&#8217;assequi massa, ho treiem i deixem refredar una mica. Quan sigui tebi ja el podem separar del paper (o silicona), li posem un drap fi de cotó previament mullat amb aigua calenta.</p>
<p><strong>La crema de llimona:</strong></p>
<p>Ingredients:</p>
<ul>
<li>2 ous</li>
<li>80 gr. de maizena</li>
<li>2 gots d&#8217;aigua</li>
<li>la pell de dues llimones ratllades</li>
<li>150 gr. de sucre</li>
<li>suc d&#8217;una llimona</li>
</ul>
<p>Elaboració:</p>
<p>Posem en un bol els ous, sucre i ratlladura de llimona, el suc de la llimona i la maizena, es bat tot i es guarda apart.</p>
<p>En un cassó al foc posem els gots d&#8217;aigua, quan bulli li afegim la barreja anterior sense parar de remenar, quan veiem que espeseix, (1 minut) ja es pot treure del foc i deixar refredar.</p>
<p>Hem deixat la placa del braç de gitano feta, ara li posarem per sobre aquesta crema, però procurant que no arribi als cantó, deixem un cm de marge, i anem enrotllant, com si fos sushi&#8230; Acabem tancant amb crema els dos extrems que segurament no en tindran.</p>
<p>El deixem enrotllat en una safata i ara ja podem anar a pel praliné:</p>
<p><strong>La trufa al praliné:</strong></p>
<p><strong>Ingredients:</strong></p>
<ul>
<li>250 gr. nata líquida</li>
<li>625 gr. de sucre</li>
<li>250 gr. de xocolata de cobertura 70% cacao</li>
<li>100 gr. de praliné</li>
<li>1/2 got de licor de taronja</li>
</ul>
<p><strong>Elaboració:</strong></p>
<p>Posem a fondre la xocolata de cobertura, al bany maria o be al microones. Mentrestant posem a bullir la nata i el sucre, quan bulli, o be quan arribi a 112 ºC, ho barregem amb la xocolata i el praliné, afegim el licor.</p>
<p>Amb aquesta barreja calenta, la posem per sobre del tronc amb una espatula, i ho deixem reposar 8h mínim.</p>
<p>Al treure&#8217;l a taula el deixarem a temperatura ambient 30 min. abans de servir, la xocolata no pot ser freda.</p>
<p>Com veieu és fàcil de fer, l&#8217;únic és que s&#8217;ha d&#8217;anar ràpid a fer-lo, no es pot trencar la placa de braç de gitano i ha de quedar ben tancadet.</p>

<p>Aquesta recepta l&#8217;he fet després de veure que les últimes tendències son els postres en gots. A cops em semblava quelcom més fàcil que en un motlle o safata, però si ho proves et dones compte que és quelcom igual de dificil.</p>
<p>Les capes que te aquest postre son (de baix a dalt):</p>
<p>- Crema de vainilla</p>
<p>- Polpa de pera</p>
<p>- Galetes Maria triturades</p>
<p>- Coulis de gerds</p>
<p>- Crocant</p>
<p>Per a 6 persones:</p>
<p>Fem una Crema de Vainilla amb:</p>
<p>1/2 litre de llet sensera</p>
<p>100 gr. de sucre</p>
<p>1 veina de vainilla</p>
<p>4 rovells d&#8217;ou</p>
<p>20 gr de farina de Maizena</p>
<p>Posem a bullir la llet amb la veina de vainilla, en separem mig got apart i un cop bullida la deixem refredar.</p>
<p>Posem els rovells d&#8217;ou amb el sucre, la farina i amb la mica de llet que hem separat, ho barregem be.</p>
<p>Afegim la llet bulida a poc a poc a aquesta barreja i la remenem be, la tornem a posar al foc per a que bulli, quan veiem que espesseix la podem treure i deixar refredar. Quan sigui una mica tèbia ja la podem posar en got, procurant que tots quedin amb la mateixa alçada de crema.</p>
<p>Mentrestant per la 2a capa posem una pera Leclerc al forn (com si fos una poma al forn).</p>

<p>La deixem coure fins que veiem que està feta, la pelem i triturem la polpa ben fina. La posem sobre la crema.</p>
<p>Posem 4 galetes Maria (en aquest cas eren de la marca Núria) triturades a sobre.</p>
<p>Amb 250gr de gerds, els posem amb 4 cullerades de sucre a fer un coulis de gerds, mentrestant anem tronxant amb una llengua o espàtula per a que sigui una mica puré. Quan veiem que ja no te gaire liquid el treiem del foc. Ja podem posar als gots.</p>
<p>I l&#8217;última capa seria de crocant, en aquest cas el vaig comprar fet.</p>
<p>Es deixa reposar una nit a la nevera i el dia següent està deliciós.</p>

<p><strong>Per a la crema:</strong><br />
300 gr de pomes<br />
300 gr de peres (conference, leclerc&#8230;)<br />
8 nous de macadamia<br />
1 persimó</p>
<p><strong>Elaboració</strong></p>
<p>Es pelen i tallen a trossos les pomes i les peres, les posem en un recipient per poder anar al microones. Li posem un polsim de sucre per sobre, ho deixem coure uns 10 min a màxima potencia.</p>
<p>Ho passem per la trituradora i ho deixem refredar. Tallem el persimó a llesques, li posem sucre per sobre  i ho posem amb paper sulfuritzat al forn, 10 min a 200 ºC. Mentrestant posem el puré de poma i pera en copes de postres, en aquest cas he posat plats. Ratllem la macadamia a sobre i ho decorem amb el persimó.</p>
