<p>Aquesta quiche es fruit de ajuntar ingredients que més o menys lliguen. Fa uns dies em van regalar uns <strong>botifarrons</strong> de la Ribera d&#8217;Ebre, i volia cuinar-los barrejats amb verdures, que és com més ens agrada. Uns <strong>alls tendres i un porro</strong> han fet les funcions de verdura i la resta es el que és habitual d&#8217;una <strong>quiche</strong>, tret de la <strong>crema de civada</strong> que és un invent meu. Estic substituint a totes les receptes la crema de llet o nata per crema de civada i així baixar el nivell de colesterol del que menjem.</p>

<p><strong>Ingredients (4 racions):</strong></p>
<ul>
<li>6 <strong>botifarrons petits de ceba (morcilla)<br />
</strong></li>
<li>3 ous</li>
<li>1 culleradeta de polpa de nyora</li>
<li>1 <strong>crema de civada</strong> de 200 ml</li>
<li>3 <strong>alls tendres</strong></li>
<li>1 <strong>porro</strong></li>
<li>nou moscada</li>
<li>sal</li>
<li>pebre</li>
<li>200 gr. de pasta brisa</li>

<p><strong>Elaboració:</strong></p>
<p>Tallem ben petit el <strong>porro</strong> i els <strong>alls tendres</strong>, els posem a estofar en una cassola amb una mica d&#8217;oli, quan son rossos els reservem apart.</p>
<p>En un recipient posem els <strong>botifarrons</strong> tallats petits, l&#8217;all tendre i el porro, afegim l&#8217;ou batut, la polpa de nyora, la crema de civada, la sal, pebre i nou moscada, ho barregem be.</p>
<p>Posem la pasta brisa en un motlle de quiche, la posem a coure al forn uns 15 minuts, passat aquest temps la treiem i li afegim el contingut de la quiche, ho fem coure al forn uns 35-40 minuts a 180 ºC.</p>

<p><strong>Elaboració:</strong></p>
<p>Posem la massa de la pizza estesa i ben &#8220;fineta&#8221;, a sobre amb un pinzell posem el tomaquet fregit ben repartit.</p>
<p>Tallem el pernil ben petit i el posem repartir per tota la pizza, les olives, la mozzarella, i l&#8217;orenga.</p>
<p>El posem al forn calent a 250ºC, es molt important que estigui calent!</p>
<p>Ens ho mengem acabat de fer.</p>

<p>La recepta de la massa de la pizza no te cap secret, i un cop t&#8217;acostumes a fer-la ja no en compres mai més! A mi m&#8217;agrada cruixent i també que sigui fineta, tot és qüestió de gustos oi?</p>
<p>Una massa de pizza ha de ser bona i saludable, per tant la farem amb farina integral, que no la fa cruixent precisament, i li afegirem una mica de farina blanca per donar-li l&#8217;acabat cruixent i sesam:</p>
<p><strong>Preu aproximat per ració: </strong>0,91 €</p>
<p><strong>Ingredients:</strong></p>
<ul>
<li>2 gots de farina integral (tipus 165 de farines franceses)</li>
<li>1 got de farina blanca</li>
<li>15 gr de llevadura prensada (del Mercadona, Bon Preu)</li>
<li>2 gots d&#8217;aigua</li>
<li>Sal</li>
<li>Sucre</li>
<li>Oli 1/2 got</li>
<li>Orenga en pols</li>
<li>Sesam</li>
</ul>
<p><strong>Elaboració:</strong></p>
<p>Per a fer-la uso una màquina panificadora, en el meu cas La Cocinera Breadman, però també es pot fer a mà.</p>
<p>Posem el llevat amb 1 got d&#8217;aigua i el desfem be, deixem que fermenti 15 minuts, passat aquest temps afegim la farina integral, després la farina blanca i per ultim la sal, el sucre, l&#8217;oli, el sesam, l&#8217;orenga i ho pastem be, la massa no se&#8217;ns ha d&#8217;enganxar a les mans i un cop sigui ben pastada la posem a fermentar en un lloc calent sense corrent d&#8217;aire i amb un drap de cotó a sobre. Fins que dobli el volum.</p>
<p>Un cop ha fermentat la partim en dues parts, la primera l&#8217;estirem amb un corró fent-ne una capa molt fina i la posem en una safata al forn, ja li podrem posar els ingredients a sobre.</p>
<p>Per coure-la amb 10 minuts a 240 ºC n&#8217;hi ha prou.</p>

<p>Aquesta recepta la vaig pensar com un <strong>pica pica pels Nadals,</strong> i em sembla que vist l&#8217;èxit el faré més cops. La idea es que sigui una quiche però petita.</p>
<p>El motlle més petit que tinc de silicona (que no sigui de bombons) és un en forma de poma i un altre que és una flanera.</p>

<p><strong>Ingredients</strong> (per a 11 mini quiche):</p>
<ul>
<li>4 ous</li>
<li>200 gr de nata</li>
<li>250 gr de <strong>bolets</strong> congelats</li>
<li>100 gr de formatge parmesà</li>
<li>Sal</li>
<li>Pebre</li>
<li>Nou moscada</li>
</ul>
<p><strong>Elaboració</strong>:</p>
<p>Posem a sofregir els <strong>bolets</strong> en una paella, batem els 4 ous en un recipient, hi posem la nata, sal, pebre, nou moscada i el formatge parmesà. Quan els bolets son templats els afegim a la barreja.</p>
<p>Emplenem els motlles, anant en compte de no arribar fins dalt sino deixant un marge. Més o menys fins a 2/3 parts, per a que pugui creixer.</p>
<p>Escalfem el forn a 180 ºC, preparem una safata, per coure els motlles, durant uns 20 min. Deixem refredar per desmotllar.</p>
<p>Ho podem congelar dins del motlle, i el descongelem quan ho necessitem. Això permet preparar-ho amb antel·lació, i usar-ho en un menú quan volem.</p>

<p>Tenia ganes de provar una recepta diferent en quan a massa de la <strong>quiche</strong>, i aquesta és diferent! amb <strong>flocs de civada</strong> (avena). Es d&#8217;una textura lleugera però molt diferent alhora.</p>
<p><strong>Per a la massa:</strong></p>
<ul>
<li> 200 gr de <strong>flocs de civada</strong></li>
<li> Un raig d’oli d’oliva</li>
<li> 1 ou gros</li>
<li> Una mica d’aigua</li>
<li> Una mica d’orenga</li>
<li> Sal</li>
</ul>
<p><strong>Per al contingut:</strong></p>
<ul>
<li> 1 porro gran</li>
<li> 250 gr Carbassa cuita</li>
<li> 8 seitons marinats</li>
<li> 4 ous</li>
<li> 1 iogurt natural</li>
<li> Orenga</li>
<li> Sal</li>
</ul>
<p><strong>Elaboració</strong></p>
<p>Es barregen els <strong>flocs de civada </strong>amb aigua, ou i el oli, i ho anem treballant com si es tractes d’una massa de pa. A l’últim moment li afegim la sal i la orenga (que li dona gustet).</p>
<p>Amb aquesta massa folrem un motlle per anar al forn, que prèviament haurem untat o be amb oli o mantega per a que no s’enganxi res.</p>
<p>Posem una cassola amb oli per enrossir el porro, quan sigui ros l’aboquem dins del motlle preparat, posem la carbassa distribuïda pel motlle. Batem els ous per separat amb el iogurt, corregim de sal. Tirem aquest líquid sobre les verdures i per últim afegim els seitons. Posem el polsim d’orenga i ho posem 30 minuts al forn a 180 ºC (prèviament escalfat).</p>
<p>La servim calenta o freda, és bona igual.</p>

<p>Es pelen i tallen a trossos grans les cebes, es posen en una cassola amb oli a sofregir, quan siguin toves o rosses, les retirem del foc.</p>
<p>Untem amb mantega un motlle que pugui anar al forn. Escalfem el forn a 200 ºC.</p>
<p>Posem una cullerada de sucre al fons del motlle, a sobre la ceba, amb herbes aromàtiques com romaní. I per últim la massa a sobre de tot, tenim en compte que es una Tarta Tatin, que com diu la tradició va sortit així perquè les germanes Tatin es van equivocar i si no e vero e ben trovato&#8230;</p>
<p>O posem al forn uns 40 min, ho traiem i mirem que no s’enganxi la massa a les parets del motlle i li donem la volta.</p>
<p>Es un plat molt saludable, per acompanyar carns i peixos va molt be.</p>

<p><strong>Per a la coca:</strong><br />

<p><strong>Per al contingut:</strong><br />
Tomàquet fregit<br />
6 sardines o maires obertes sense espines ni cap<br />
1 carbassó<br />
Olives negres<br />
30 gr. de Formatge parmesà</p>
<p><strong>Elaboració:</strong></p>
<p>Es posa el llevat diluït en aigua i es deixa 15 min fins que faci escuma, passat aquest temps, hi afegim la farina blanca i la integral, la sal, el sucre, la orenga i el raig d’oliva, ho barregem be fins que faci “bola” i no se’ns enganxi a les mans. Afegir farina o aigua segons necessitem corregir. Ho deixem fermentar unes 5 o 6 hores.</p>
<p>Posem la massa estirada amb un corró en una safata de forn, a sobre hi posem una capa de tomàquet fregit, a sobre hi disposem el peix obert i als espais que quedin el carbassó tallat a llesques fines, les olives negres i el formatge parmesà. Ho enfornem uns 15 min. aproximadament a un forn escalfat a 240 ºC.. Es pot menjar calenta o freda.</p>
