<p>Aquesta recepta és una variació de la recepta <a title="Gotet de gelatina de tomàquet escalivat i mousse d'alberginia" href="http://lesreceptesdesthilari.blogspot.com/2009/11/gotet-de-gelatina-de-tom-aquet.html">Gotet de gelatina de tomàquet escalivat i mousse d&#8217;alberginia, del blog Les receptes de Sant Hilari</a>, un blog fantàstic que he descobert la setmana passada.</p>
<p>Com que no volia comprar alberginia, la vaig substituir per <strong>mousse d&#8217;anxova i parmesà,</strong> el resultat molt divertit, amb color i un gust molt suau.</p>
<p>Les anxoves les he preparat jo al juny i al desembre ja es podien tastar. Un altre dia us en posaré la recepta, son genials de menjar i és emocionant veure com es transforma.</p>
<p><strong>Preu </strong>(cada unitat)<strong>:</strong></p>
<ul>
<li>0,79 €</li>
</ul>
<p><strong>Ingredients</strong> (per a 6 gots):</p>
<p style="padding-left: 30px;">Per la <strong>gelatina de tomàquet escalivat</strong>:</p>
<ul>
<li>10 <strong>tomàquets </strong>de Canàries</li>
<li>1 cullerada i 3/4 d&#8217;<strong>agar agar</strong> (alga per espessir)</li>
</ul>
<p style="padding-left: 30px;">Per la <strong>mousse d&#8217;anxova i parmesà:</strong></p>
<ul>
<li>8-9 anxoves</li>
<li>30 gr de nata</li>
<li>1 culleradeta d&#8217;<strong>agar agar</strong></li>
<li>1 clara d&#8217;ou a punt de neu</li>
<li>50 gr de formatge parmesà</li>
</ul>
<p><strong>Elaboració</strong>:</p>
<p>Aquesta recepta és senzilla de fer, primer <strong>escalivem els tomàquets,</strong> els posem en una safata al forn, que haurem escalfat abans a 200 º C, durant uns 50 minuts, depen del tamanys dels tomàquets.</p>
<p>Quan siguin cuits, els treiem del forn i els pelem i triturem ben fi, treient les llavors del tomàquet.</p>
<p>Posem en un cassó el liquid resultant, i posem l&#8217;alga Agar agar, ho fem bullir uns 6-8 minuts, anem remenant per tal que quedi ben fi. Passat aquest temps ho posem en gots mirant que quedin nivellats.</p>
<p>Per fer la <strong>mousse d&#8217;anxova i parmesà,</strong> batem una clara d&#8217;ou a punt de neu, i quan sigui ben ferma li afegirem les anxoves triturades amb la nata i el parmesà, ho barregem amb compte que no ens baixi la barreja.</p>
<p>En un cassó posem a bullir amb mig got d&#8217;aigua la culleradeta d&#8217;agar agar, ben barrejat, bullim 3-4 minuts, ho afegim a la barreja anterior i remenem be, ho posem en els gotets.</p>
<p>Per finalitzar posem una anxova a la part superior i ho reservem 8h a la nevera.</p>

<p>Tomaquet madur</p>
<p>Elaboració:</p>
<p>Preparem el <a title="Pastís de peix, pastís d'escòrpora" href="http://www.llepadits.com/2009/06/pastis-descorpora-pastel-de-cabracho/">pastís de peix tal i com posa en aquest enllaç</a>, sense la salsa. Pintem amb oli la pasta brick per tal que puguem coure-la, anem amb molt de compte alhora de treballar-hi.</p>
<p>Posem una mica de pastís dins de cada rodona, i ho lliguem amb una tira fina de puerro.</p>
<p>Ho posem en una safata al forn, escassament 4-5 min a 180 graus, cal vigilar que no es cremi, mentrestant anem fent una amanida verda per acompanyar.</p>
<p>Ho posem en platets individuals i ja ho podem servir, es menja calent o acabat de fer.</p>
<p>Que vagi de gust!</p>

<p>Quan era petita, ma mare feia una sopa de peix boníssima, i sempre he volgut saber fer-ne, haig de confessar que fins que no me l&#8217;ha explicada una peixetera molt experta en cuina, no m&#8217;ha sortit be, o be em quedava rebullida o be amb gust a amoniac.</p>
<p>Ingredients:</p>
<ul>
<li>300 gr. de peix variat, crancs, gambes, rap, congre, mollera, lluerna&#8230;</li>
<li>1 ceba</li>
<li>1 tomaquet gran madur</li>
<li>1 cullerada de carn de nyora</li>
<li>1 picada</li>
<li>4 grans d&#8217;all</li>
<li>Sal</li>
</ul>
<p>Elaboració:</p>
<p>Posem a sofregir la ceba, quan sigui rossa afegim l&#8217;all, quan sigui una mica cuït, afegim el tomaquet a daus, sense ull ni pell. Quan sigui cuït li posem la carn de nyora.</p>
<p>Mentrestant en un altre fogó, posem el peix i el cobrim d&#8217;aïgua, el deixem coure uns 15 min. Quan sigui una mica cuït amb una ma de morter anirem xafant i treien la substància del peix, quan sigui bastant esmicolat ja estarà.</p>
<p>Piquem en un morter la picada.</p>
<p>Afegim el caldo ben colat, al sofregit de ceba, tomaquet, all i nyora, i ho deixem bullir una mica més, corregim de sal, afegim la picada a sobre, ho deixem bullir uns 3 min. i tanquem.</p>
<p>Podem servir així la sopa, o qui la vulgui més consistent hi pot posar fideus fins.</p>

<p>Aquesta recepta es una variació que faig de la fideuà clàssica, que quasi be podria ser un arrosejat de fideus. El resultat és que agrada molt i feta amb paciència pot lluïr molt.</p>
<p>Necessitem per a fer-la ingredients de primera qualitat, com sempre son determinants en la qualitat del plat.</p>
<p><strong>Ingredients (8 persones):</strong></p>
<ul>
<li>1 sepia gran (1 kg. aprox.)</li>
<li>16 gambes (calculem 2 per cap grans)</li>
<li>400 gr. de cloïses</li>
<li>8 dents d&#8217;all</li>
<li>1 porro</li>
<li>2 l. de brou de peix (podeu usar un del Aneto que està molt bo especial per paelles, o be fer-lo amb antelació)</li>
<li>1 paquet de fideus per fideuà ( o del número 2)</li>
<li>250 gr d&#8217;all i oli</li>
</ul>
<p><strong>Elaboració:</strong></p>
<p>En una cassola fonda posem un bon raig d&#8217;oli d&#8217;oliva</p>
<p>Posem a sofregir els alls tallats petitons, quan son fregits hi posem les gambes amb cap, fem una volta i volta i les reservem. En aquest oli afegim la sèpia, tallada a trossos petits, i el porro tallat a també.</p>
<p>Quan veiem que està cuït, hi afegim els fideus, i els deixem que s&#8217;impregnin del suquet de la sèpia i del porro i del oli&#8230; anem remenant i un cop veiem que ja no queda liquit, afegim el brou de peix.</p>
<p>Deixem coure els fideus segons digui cada fabricant, i quan faltin 3 minuts per acabar l&#8217;ebullició posem les gambes que teniem reservades i les cloïses (que encara estan crues).</p>
<p>Quan ja sigui cuït ho deixem reposar 5 min. i després tenim dues opcions, la primera posar-ho al forn per a donar-li el toc &#8220;sequet&#8221; que tenen les fideuàs, o be servir-ho tal qual, que és el que faig jo.</p>
<p>Ho servim acompanyat de l&#8217;all i oli i un bon vi blanc fresquet.</p>
<p>Es un plat molt complet. Tot i així cada cop que en faig no en queda ni les engrunes!</p>

<p>Aquesta amanida es una variant de la que fa la meva mare, ella la fa amb tonyina i amb tomaquet ratllat per sobre i jo he canviat la tonyina en conserva per la <a title="Conserva de melva" href="http://www.llepadits.com/2009/06/conserva-de-melva-en-oli-doliva/">melva.</a></p>
<p>Ingredients (per a 4 persones):</p>
<p>4 patates mitjanes bullides amb pell</p>
<p>1 got de gaspatxo</p>
<p>4 trossos de melva en conserva</p>
<p>1 mica de julivert</p>
<p>Elaboració:</p>
<p>Es tallen a rodanxes les patates que haurem pelat i es posen en una plat gran, que ocupin tot el plat.</p>
<p>Es reparteix per sobre el gaspatxo, que ho cobreixi, afegim la melva esmicolada amb una forquilla per sobre i el julivert tallat ben petit.</p>
<p>Tot plegat ho posem a la nevera i ho deixem reposar unes hores abans de menjar-ho, està més bo.</p>
<p>Es un entrant molt fàcil que podem deixar preparar per quan arribem a casa i no tenim gaire ganes de posar-nos a la cuina.</p>
<p>Fer fer-ne una variació, ultimament estic fent proves amb &#8220;tapes&#8221;, el mateix però servit en petites racions, us en poso una foto de com queda, jo trobo que es divertit, i sobretot si talles les patates quadrades aleshores es una mica sorpresa de què pot ser el que estàs menjant.</p>

<p>La Melva es un peix similar a la tonyina però no és el mateix.</p>
<p>Aquesta recepta l&#8217;he deduït de receptaris que tinc i preguntant a la peixetera, haig de dir que no n&#8217;estava gens convençuda del seu resultat i ara que ja l&#8217;he tastat us asseguro que repetiré. Es impressionant el seu sabor i la textura, res a veure amb les conserves industrials.</p>
<p>Ingredients:</p>
<p>1 melva de 800 gr- 1kg aprox.<br />
Sal<br />
Aïgua<br />
Oli verge d&#8217;oliva</p>
<p>Elaboració:</p>
<p>Es posa aigua amb sal, la proporció es un 10 % de sal per la quantitat d&#8217;aigua que tenim. Quan bull es posa la melva i ho deixem uns 30 min. Un cop bullida s&#8217;escorre i es trosseja a trossos grossos, es treu la pell i les espines i els posem en un pot amb oli, que cobreixi be. El posem a bullir per esterilitzar i ja el podem guardar, un cop obert ja ha d&#8217;estar a la nevera.</p>

<p>Es un plat que resulta molt còmode quan fa ja una mica de calor, es refrescant i estalvia hores a la cuina durant la setmana.</p>
<p>Ingredients:</p>
<p>1 escòrpora d&#8217;uns 600-700 gr<br />
200 ml nata per montar<br />
1 vas de tomaquet fregit<br />
5 ous<br />
Nou moscada<br />
Pebre molt<br />
Sal</p>
<p>Per fer el caldo curt:</p>
<p>3 alls<br />
1 porro<br />
julivert<br />
½ llimona espremuda<br />
cap i espina de l&#8217;escòrpora</p>
<p>Per la salsa “rosa”:</p>
<p>1 iogurt de llet sensera<br />
2 cullerades de quetchup</p>
<p>Per acompanyar:</p>
<p>Torradetes de pa integral i sesam<br />
Enciam variat, llollo rosso, fulla de roure&#8230;</p>
<p>Elaboració:</p>
<p>Posem l&#8217;all, el julivert, el suc de llimona, el porro i aigua a bullir, uns 15 min, a foc mitjà. Passat aquest temps hi posem l&#8217;espina i el cap de l&#8217;escòrpora. Ho deixem bullir uns 10 min. Després hi posem l&#8217;escòrpora, ho deixem bullir uns 8 min. Ho treiem del foc i deixem refredar.</p>
<p>Posem a escalfar el forn a 160ºC.</p>
<p>Posem en una batedora tipus turmix el peix sense pell ni espines, el tomaquet fregit, la nata, els ous, la sal, pebre, nou moscada, i ho triturem per a que quedi ben fi. Ho posem en un motlle per anar al forn i al bany Maria.</p>
<p>Posem el motlle en bany Maria durant 1h a 160 ºC.</p>
<p>Deixar refredar, i un cop fred el desmotllem, en aquet moment preparem la salsa “rosa”, ho poso entre cometes perquè no es l&#8217;autèntica sino que li he tret un munt de calories i és més lleugera.</p>
<p>Posem la salsa per sobre i ja ho podem guardar a la nevera.</p>

<p>Ho servim a tallets, es un pastís que omple molt i molt bo alhora. Acompanyat d&#8217;amanida compensem una mica la nata que porta.</p>

<p>Elaboració:</p>
<p>Per a fer el maki sushi no moriawase no necessitem tenir molts coneixements simplement amb que coneguem trucs ja ni ha prou.</p>
<p>El peix ha de ser molt fresc ja que el menjarem cru. I ultimament es van donar veus d&#8217;alerta per l&#8217;anisakis, una bacteria que viu al peix cru i que si la ingerim passa a “viure” dins nostre provocant transtorns digestius. Els japonesos des de fa molts anys ho solucionen posant wasabi al peix, el wasabi serveix per a matar aquest tipus de bacteri que te el peix cru, per això també es important que es posi. Les autoritats sanitàries recomanen congelar 24h el peix i descongelar després per a fer plats amb peix cru.</p>
<p>Posarem tant arros com unitats volguem fer, per a que tingueu una orientació, per a 24 unitats hem posat 4 gots petits d&#8217;arros i 10 gots d&#8217;aigua. Primer de tot hem de rentar ben be l&#8217;arroç sota l&#8217;aïgua i passar-hi tantes aïgues com sigui necessari per a que perdi el midó que porta, quan veiem que ja no surt blanca l&#8217;aïgua ja podem passar al següen pas.</p>
<p>El procés d&#8217;ebullició ha de ser el següent:</p>
<p>10 minuts a foc mig<br />
15 minuts a foc baix<br />
5 minuts amb el foc tancat i l&#8217;olla tapada</p>
<p>Passat aquest procés, posarem l&#8217;arroç en un recipient de fusta que sigui fondo, i afegirem poc a poc vinagre de sushi i anirem ventant per a que es refredi l&#8217;arroç.</p>
<p>Per a fer els rotlles, necessitarem una esterilla japonesa, que ens servirà per a poder enrotllar l&#8217;alga.</p>
<p>En una esterilla posem una alga Nori que la cobreixi be, el costat més brillant de cap avall, el mate cap amunt. A sobre distribuïm l&#8217;arros, en una capa fina que no arribi als cantos. Si se&#8217;ns enganxa a les mans ens podem posar una mica de vinagre a les mans per a poder treballar-ho.</p>
<p>Posem al mig una mica de wasabi (poc!) i el cogombre tallat a tires fines i llarges  (en el meu cas es pot veure a la foto que vaig posar carbassó, doncs no tenia cogombre) i el peix tallat a tires fines i llargues sense pell ni espines (cru). Es posa de banda a banda i ja podem enrotllar, l&#8217;alga i l&#8217;arroç fan de “pegamento”. Un cop tenim el rotlle fet el tallem a porcions que es puguin agafar fàcilment. Si al tallar se&#8217;ns enganxa l&#8217;arros al ganivet el podem “mullar” amb vinagre de sushi per a que no s&#8217;enganxi al tallar.</p>
<p>Es serveix amb un montonet de wasabi (poquet) i un montonet de gingebre.</p>
<p>La funció del gingebre es canviar de gust entre tipus de peix. Normalment aquest es un plat que es pot fer amb salmó, peix espasa, bonítol&#8230;</p>
<p>Si sobra arros, es pot guardar a la nevera per a fer-ne més un altre dia.</p>

<p>Es treu la pell del rap i les dents i es deixen sencers. Es bullen les patates senceres amb pell.</p>
<p>Es passa el carbassó per la planxa i el deixem rosset i marcat.</p>
<p>Es fa un all i oli amb 2 dents d&#8217;all a les que s&#8217;haurà tret l&#8217;ànima, 200 cc d&#8217;oli, un rovell d&#8217;ou, 1 cullerada d&#8217;oli i 1 de vinagre de vi blanc, amb el turmix el montem.</p>
<p>Es fa el rap a la planxa, procurant que quedi tot ben cuït, es serveix immediatament.</p>
<p>Es un plat molt senzill i bo alhora, el rap omple molt i amb la verdura i all i oli es un plat molt complet.</p>

<p>Aquesta recepta es ideal per a aprofitar el pa sec que podem tenir, queda una massa molt suau que amb torradetes és molt bona.</p>

Llet per a remullar el pa<br />
3 rovells d&#8217;ou<br />
1 ou senser<br />

<p>Elaboració:<br />
Es posa el pa a remullar, un cop sigui tou, el posem en un turmix i el batem fins que quedi fi amb els seitons i l&#8217;ou.</p>
<p>Untem un motlle amb oli i li posem la barreja, ho posem al forn al bany maria uns 40 minuts a 180 º.</p>
<p>Va molt be per acompanyar torrades.</p>
