<p>Aquesta recepta també se&#8217;m va ocorre en el Taller de Bon Preu amb en David Lienas, la carbassa m&#8217;agrada de tota manera i aquesta també és una bona ocasió.</p>
<p>Ingredients (Per a 6 caramels):</p>
<ul>
<li>4 fulles de pasta filo</li>
<li>Carbassa cuita al forn, al gust, jo en poso força</li>
<li>Farcit de canelons</li>
</ul>
<p>Elaboració:</p>
<p>Posem la carbassa i el farcit en un recipient i ho barregem be, que quedi pastós y ben barrejat. Ho posem a congelar en glaçoneres una mica grans.</p>
<p>El dia que anem a fer el farcit, agafem la pasta filo i emboliquem un glaçó, el pintem amb mantega fosa i el posem al forn calent 10 min a 180 º C. Servim inmediatament.</p>
<p>Al portar la carbassa és molt lleuger i tothom en vol més, però com que és un caramel, ho deixem en un i així un altre dia en volem més. <img src='http://www.llepadits.com/wp-includes/images/smilies/icon_wink.gif' alt=';-)' class='wp-smiley' /> </p>

<p>Aquest es un postre que feia anys que volia provar, però tenia por que quedés una mica empalagós, fort o massa pesant com a final d&#8217;un dinar de Nadal, i no ha estat així, ha quedat esponjós i fresquet, sobretot per la crema de llimona que porta a dins.</p>
<p>S&#8217;ha de fer en 3 fases:</p>
<ul>
<li>Primer el braç de gitano</li>
<li>Segón la crema de llimona</li>
<li>Tercer, la trufa al praliné</li>
</ul>
<p><strong>El braç de gitano:</strong></p>
<p>Per a fer-ho he utilitzat una recepta de Recetario de Sor Maria Isabel, &#8220;Los dulces de las monjas&#8221;, un llibre excel·lent.</p>
<p>Ingredients:</p>
<ul>
<li>150 gr. de sucre</li>
<li>150 gr. de maizena</li>
<li>5 ous</li>
<li>1 clara d&#8217;ou</li>
<li>1 llimona sensera ratllada</li>
<li>10 gr de sucre llustre</li>
<li>20 gr de llevat de reposteria</li>
</ul>
<p>Elaboració:</p>
<p>Posem a escalfar el forn a 160 ºC, ja que el procés és molt ràpid.</p>
<p>Barregem en un bol els rovells, el sucre, la llimona ratllada i ho batem ben fort.</p>
<p>En un altre bol (o robot) posem les clares a punt de neu, un cop ho estan, barregem les clares i els rovells però mirant que no s&#8217;abaixi la barreja i anem incorporant la farina i el llevat.</p>
<p>Ho posem en una placa de forn amb un paper antiaderent a sota, si es de silicona no cal untar amb mantega, si no ho és sí que cal.</p>
<p>Ho posem al forn durant 15 min. Mentres es fa, anem fent la crema de llimona.</p>
<p>Aneu en compte que no s&#8217;assequi massa, ho treiem i deixem refredar una mica. Quan sigui tebi ja el podem separar del paper (o silicona), li posem un drap fi de cotó previament mullat amb aigua calenta.</p>
<p><strong>La crema de llimona:</strong></p>
<p>Ingredients:</p>
<ul>
<li>2 ous</li>
<li>80 gr. de maizena</li>
<li>2 gots d&#8217;aigua</li>
<li>la pell de dues llimones ratllades</li>
<li>150 gr. de sucre</li>
<li>suc d&#8217;una llimona</li>
</ul>
<p>Elaboració:</p>
<p>Posem en un bol els ous, sucre i ratlladura de llimona, el suc de la llimona i la maizena, es bat tot i es guarda apart.</p>
<p>En un cassó al foc posem els gots d&#8217;aigua, quan bulli li afegim la barreja anterior sense parar de remenar, quan veiem que espeseix, (1 minut) ja es pot treure del foc i deixar refredar.</p>
<p>Hem deixat la placa del braç de gitano feta, ara li posarem per sobre aquesta crema, però procurant que no arribi als cantó, deixem un cm de marge, i anem enrotllant, com si fos sushi&#8230; Acabem tancant amb crema els dos extrems que segurament no en tindran.</p>
<p>El deixem enrotllat en una safata i ara ja podem anar a pel praliné:</p>
<p><strong>La trufa al praliné:</strong></p>
<p><strong>Ingredients:</strong></p>
<ul>
<li>250 gr. nata líquida</li>
<li>625 gr. de sucre</li>
<li>250 gr. de xocolata de cobertura 70% cacao</li>
<li>100 gr. de praliné</li>
<li>1/2 got de licor de taronja</li>
</ul>
<p><strong>Elaboració:</strong></p>
<p>Posem a fondre la xocolata de cobertura, al bany maria o be al microones. Mentrestant posem a bullir la nata i el sucre, quan bulli, o be quan arribi a 112 ºC, ho barregem amb la xocolata i el praliné, afegim el licor.</p>
<p>Amb aquesta barreja calenta, la posem per sobre del tronc amb una espatula, i ho deixem reposar 8h mínim.</p>
<p>Al treure&#8217;l a taula el deixarem a temperatura ambient 30 min. abans de servir, la xocolata no pot ser freda.</p>
<p>Com veieu és fàcil de fer, l&#8217;únic és que s&#8217;ha d&#8217;anar ràpid a fer-lo, no es pot trencar la placa de braç de gitano i ha de quedar ben tancadet.</p>

<p>Aquest ja es l&#8217;ultim torró que he fet aquestes festes, i es fruït d&#8217;un error meu, volia fer un torró directament amb la trufa i no em quallava ja que vaig afegir massa licor, per tant li vaig fer la &#8220;capseta&#8221; amb la cobertura de xocolata i ha quedat deliciós!</p>
<p>Ingredients:</p>
<p>Per fer la trufa:</p>
<ul>
<li>250 gr. nata líquida</li>
<li>500 gr. de sucre</li>
<li>250 gr. de xocolata de cobertura 70% cacao, li direm xocolata 1</li>
<li>100 gr. d&#8217;avellanes torrades partides per la meitat</li>
<li>1/2 got de licor de taronja o cointreau</li>
</ul>
<p>Per la cobertura o embolcall:</p>
<ul>
<li>200 gr. de xocolata de cobertura, mínim 60 % de cacao, li direm xocolata 2</li>
</ul>
<p>Elaboració:</p>
<p>Posem la nata líquida a bullir amb el sucre, i ho fem bullir fins a 112 º C. En un altre cassó posem la xocolata a desfer al bany Maria, quan sigui desfeta ho afegim a la nata i el sucre, afegim les avellanes i el licor.</p>
<p>Per montar el torró posem la xocolata de cobertura (xocolata 1) a desfer al bany Maria, quan ja sigui desfeta la posem en el motlle de torró, fent que el cobreixi i que tingui forma de capseta, treure el xocolata sobrant, no ha de quedar gruixut. Posem el motlle a la nevera. Quan veiem que ja s&#8217;ha refredat la cobertura, ho treiem i afegim la trufa, que no arribi fins dalt ja que hem de tancar el motlle, la posem un altre cop a la nevera.</p>
<p>Quan sigui ja ferma, la treiem i posem la xocolata de cobertura (xocolata 2), per sobre per poder tancar la barra totalment, ens ajudem d&#8217;una espàtula. En aquest procés hem d&#8217;anar molt ràpid, ja que al ser freda la trufa ens solidificarà molt ràpid la xocolata.</p>
<p>Quan hem acabat de tancar la barra, la tornem a posar a la nevera a reposar. La podem servir al cap d&#8217;unes 8 hores, la desmotllem i la posem en una safata.</p>

<p>Aquest torró no el tenia amb cap recepta, és una mica extret de l&#8217;anterior <a title="Torró de massapà, trufa i licor de pacharan" href="http://www.llepadits.com/2009/12/torro-de-trufa-amb-licor-praline-i-massapa/">torró de trufa al licor de pacharan</a>, i amb ingredients que tenia per casa.</p>
<p>El <strong>massapà</strong>:</p>
<p><strong>Ingredients:</strong></p>
<ul>
<li>70 gr. de nata líquida</li>
<li>70 gr. de sucre</li>
<li>500 gr. d’ametlles (tipus marcona en pols)</li>
</ul>
<p><strong>Elaboració</strong>:</p>
<p>Posem a bullir la nata i el sucre, quan bull, a 112 ºC, hi afegim l’ametlla, ho treiem del foc i ho barregem be, fins a fer el massapà. Ha de quedar ben fi, ho deixem reposar.</p>
<p>Per la<strong> trufa amb licor de taronja, amb taronja confitada:</strong></p>
<p><strong>Ingredients:</strong></p>
<ul>
<li>250 gr. nata líquida</li>
<li>625 gr. de sucre</li>
<li>250 gr. de xocolata de cobertura 70% cacao</li>
<li>30 gr de taronja confitada (la pell)</li>
<li>1/2 got de licor de taronja o cointreau</li>
</ul>
<p><strong>Elaboració:</strong></p>
<p>Posem a fondre la xocolata de cobertura, al bany maria o be al microones. Mentrestant posem a bullir la nata i el sucre, quan bulli, o be quan arribi a 112 ºC, ho barregem amb la xocolata i afegim el licor.</p>
<p>Posem sobre el massapà les tires de pell de taronja confitada i a sobre posarem la xocolata barrejada amb la nata i sucre.</p>

<p>Posem la xocolata i acabem amb tires de taronja confitada, ho deixem reposar un dia i ja podem desmotllar. Es un torró molt bo de gust, i gens empalagós.</p>

<p>Tal i com us vaig dir, vaig anar a la <a title="Fira del Torró d'Agramunt" href="http://www.llepadits.com/2009/10/fira-del-torro-i-la-xocolata-a-la-pedra-dagramunt/">Fira del Torró d&#8217;Agramunt,</a> on feien uns tallers de Pastisseria molt interessants, vaig tenir la sort d&#8217;anar a un d&#8217;en Claudi Uñó, de la <a title="Pastisseria Uñó de Mataró" href="http://www.pastisseriauno.com/" target="_blank">Pastisseria Uñó de Mataró</a>. Ens va donar algunes receptes, la de torró de massapà, torró de trufa de licor i torró cruixent de kikos i petazetas, i que us poso aquí:</p>
<p>El Torró de trufa amb licor, praliné i massapà, un torró fàcil de fer i boníssim, ha agradat molt a tota la familia que he tingut a casa per Nadal i Sant Esteve. La base del torró és el <strong>massapà</strong>, i la part superior és la de <strong>trufa de licor amb praliné.</strong></p>
<p>Comencem pel <strong>massapà</strong>:</p>
<p><strong>Ingredients:</strong></p>
<ul>
<li>70 gr. de nata líquida</li>
<li>70 gr. de sucre</li>
<li>500 gr. d&#8217;ametlles (tipus marcona en pols)</li>
</ul>
<p><strong>Elaboració</strong>:</p>
<p>Posem a bullir la nata i el sucre, quan bull, a 112 ºC, hi afegim l&#8217;ametlla, ho treiem del foc i ho barregem be, fins a fer el massapà. Ha de quedar ben fi, ho deixem reposar.</p>
<p>Per la<strong> trufa amb licor, amb praliné:</strong></p>
<p><strong>Ingredients:</strong></p>
<ul>
<li>250 gr. nata líquida</li>
<li>625 gr. de sucre</li>
<li>250 gr. de xocolata de cobertura 70% cacao</li>
<li>100 gr. de praliné</li>
<li>1/2 got de licor de pacharan</li>
</ul>
<p><strong>Elaboració:</strong></p>
<p>Posem a fondre la xocolata de cobertura, al bany maria o be al microones. Mentrestant posem a bullir la nata i el sucre, quan bulli, o be quan arribi a 112 ºC, ho barregem amb la xocolata i el praliné, afegim el licor.</p>
<p>Per fer el torró:</p>
<p>Un dia que vaig anar per la Boqueria, vaig comprar motlles de torró a una parada que està a la part posterior. La parada es diu FOC.</p>
<p>Posem una base molt fina de massapà:</p>

<p>El següent pas és posar-hi una capa per sobre de trufa amb licor i praliné, i ho deixem reposar i refredar, al cap de dos dies està al seu punt.</p>

En el llibre el presenten com a <strong>Roscón de Reyes</strong>. Jo no l&#8217;he acabat amb fruita confitada ni gelatina, però està deliciós. També he canviat alguns ingredients, com per exemple &#8220;mejorante&#8221;, que no en tenia, o be el gra de cafè torrefacte que no el volia posar. Es una recepta molt bona.</p>

<p><strong>Ingredients per a 2 tortells:</strong></p>
<p>500 gr. farina<br />
75 gr. de sucre<br />
175 gr. ous<br />
140 gr. nata liquida<br />
50 gr. de suc de taronja<br />
25 gr. llevat<br />
Ralladura de taronja i llimona<br />
Esencia de vainilla, llimona, taronja i nou moscada<br />
100 gr. de mantega<br />
Sal</p>
<p>Farciment:</p>
<p>Massapà</p>
<p><strong>Elaboració:</strong></p>
<p>Barrejar tots els ingredients menys la mantega, que s&#8217;afegeix al final. Deixar reposar a la nevera 12h. Fer 1 bola. Fer repós a temperatura ambient fins que dobli el tamany inicial. Dividir-ho en dos tortells, a sobre d&#8217;un posem el massapà i el cobrim amb l&#8217;altre tortell. El posem en una safata amb paper antiaderent, pintem amb ou rebaixat amb nata liquida. Deixarem fermentar a 25 o 26 ºC i 80 % d&#8217;humitat durant 120 minuts (jo he usat el forn i una cassola de fang amb aigua per a fer la humitat).</p>
<p>Coure al forn a 200 º C, un cop cuit li posem sucre en pols.</p>
<p>Es llarguet, es laboriós però està molt i molt bo.</p>

<p>Aquesta recepta la vaig fer per cap d&#8217;Any, però pot ser perfectament per a qualsevol altra data. L&#8217;acompanyament es d&#8217;hivern però també el podem anar adaptant a la temporada que estem.</p>
<p><strong>Ingredients:</strong></p>
<ul>
<li> 1 pollastre farcit de pernil, prunes, pinyons</li>
<li> 4 moniatos cuits al forn</li>
<li> 16 dàtils frescos</li>
<li> 1 kg. De cebetes</li>
<li> 50 gr de rossinyols secs</li>
</ul>
<p><strong>Elaboració:</strong></p>
<p>Es posen a remullar els rossinyols en aigua. Es pelen les cebes i es couen a foc mig en una cassola.<br />
Posem una cassola, de ferro colat si pot ser, amb una mica d&#8217;oli, quan sigui calent posem el pollastre i el passem que sigui ros (a foc mig i baix). Quan les cebes siguin rosses les afegim al pollastre, posem els dàtils i els rossinyols, depenent del tamany del pollastre trigarem més o menys a coure-ho. Aquest que veieu era de 4,5 kg i va trigar 2 hores a foc baixet, es molt important que li aneu donant la volta per tal que es cogui uniformement.</p>
<p>Ja només quedarà preparar amb els moniatos un pure, l&#8217;aixafem amb la forquilla i el deixem tal qual, jo no afegeixo ni sal ni oli, m&#8217;agrada tal com és. I preparem el plat amb un tall (depen del tamany) de pollastre, l&#8217;acompanyament de verdures i el puré.</p>
