<p>La recepta de la massa de la pizza no te cap secret, i un cop t&#8217;acostumes a fer-la ja no en compres mai més! A mi m&#8217;agrada cruixent i també que sigui fineta, tot és qüestió de gustos oi?</p>
<p>Una massa de pizza ha de ser bona i saludable, per tant la farem amb farina integral, que no la fa cruixent precisament, i li afegirem una mica de farina blanca per donar-li l&#8217;acabat cruixent i sesam:</p>
<p><strong>Preu aproximat per ració: </strong>0,91 €</p>
<p><strong>Ingredients:</strong></p>
<ul>
<li>2 gots de farina integral (tipus 165 de farines franceses)</li>
<li>1 got de farina blanca</li>
<li>15 gr de llevadura prensada (del Mercadona, Bon Preu)</li>
<li>2 gots d&#8217;aigua</li>
<li>Sal</li>
<li>Sucre</li>
<li>Oli 1/2 got</li>
<li>Orenga en pols</li>
<li>Sesam</li>
</ul>
<p><strong>Elaboració:</strong></p>
<p>Per a fer-la uso una màquina panificadora, en el meu cas La Cocinera Breadman, però també es pot fer a mà.</p>
<p>Posem el llevat amb 1 got d&#8217;aigua i el desfem be, deixem que fermenti 15 minuts, passat aquest temps afegim la farina integral, després la farina blanca i per ultim la sal, el sucre, l&#8217;oli, el sesam, l&#8217;orenga i ho pastem be, la massa no se&#8217;ns ha d&#8217;enganxar a les mans i un cop sigui ben pastada la posem a fermentar en un lloc calent sense corrent d&#8217;aire i amb un drap de cotó a sobre. Fins que dobli el volum.</p>
<p>Un cop ha fermentat la partim en dues parts, la primera l&#8217;estirem amb un corró fent-ne una capa molt fina i la posem en una safata al forn, ja li podrem posar els ingredients a sobre.</p>
<p>Per coure-la amb 10 minuts a 240 ºC n&#8217;hi ha prou.</p>

<p>Aquests dies segeixo fent proves amb la <a title="Cuina del fajol" href="http://www.llepadits.com/2010/01/fajol-fagopyrum-esculentum/"><strong>cuina del fajol,</strong></a> i en concret amb la <strong>farina de fajol </strong>(o <strong>blat sarraí</strong>). Vaig veure que al blog de la Gemma, hi havia una <a title="Creps de gelat de vainilla" href="http://lacuinadecasa.blogspot.com/2010/02/creps-de-gelat-de-vainilla-amb-salsa.html" target="_self">recepta de crep dolça</a>, i vaig recordar que tinc un llibre comprat a Paris de &#8220;Crêpes et galettes&#8221; del qual he fet poques receptes.</p>
<p>Aquesta recepta és &#8220;<strong>Les galettes de sarrasin</strong>&#8220;, en surten unes 12 unitats aproximadament. Primer us poso la recepta de la crep, i després la del farcit. Com que la base es sense sucre, podem fer el farcit com volguem.</p>
<p><strong>Crep de farina de fajol amb escarxofes i crema de bolets</strong></p>
<p><strong>Preu</strong> aproximat per ració: 0,67 €</p>
<p><strong>Ingredients</strong>:</p>
<p style="padding-left: 30px;">Per a la <strong>crep</strong>:</p>
<ul>
<li>1 ou</li>
<li>250 gr. de <strong>farina de fajol</strong></li>
<li>un got de llet petit</li>
<li>aigua freda</li>
<li>1 cullerada d&#8217;oli oliva</li>
<li>sal</li>
</ul>
<p><strong>Elaboració</strong>:</p>
<p>Barregem l&#8217;aigua, l&#8217;ou, la farina, la llet i el oli, fem una barreja que ha de quedar amb la textura d&#8217;una maionesa espessa.</p>
<p>La deixem reposar tota la nit a la nevera. Al dia següent treiem la massa i li afegim oli i llet fins que torni a quedar com una maionesa espessa.</p>
<p>Escalfem una paella i li posem una miqueta de mantega, no gaire. I provem d&#8217;afegir la massa de cullerot en cullerot. La primera crep segurament no quedarà be, però la resta sí.</p>
<p>Fem que la massa arribi al canto de la paella, girem amb una cullera plana i no deixem que es torri massa (sino no podrem plegar-ho).</p>
<p>Les creps les posem en un recipient i les guardem calentetes. Poden guardar-se fins a 24h.</p>
<p>Ingredients per al <strong>farcit</strong>:</p>
<ul>
<li><strong>Carxofes saltejades a la cassola</strong></li>
<li><strong>Crema de bolets,</strong> feta amb bolets saltejats triturats amb crema de civada.</li>
</ul>
<p><strong>Elaboració del farcit</strong>:</p>
<p>Posem la base de la crep en un plat, a sobre les carxofes i pleguem com si fos un cono. Posem per sobre la crema de bolets calenta i servim.</p>

<p>Es posa en un recipient la mantega, l&#8217;oli, el suc de taronja, el sucre, el rovell d&#8217;un ou, la llimona ratllada i el llevat.</p>

<p>Aquesta recepta és del llibre 365 galletas,  de l&#8217;editorial Oceano Ambar.</p>
<p>Ingredients:</p>
<ul>
<li>1 got de suc de taronja</li>
<li>2 ous</li>
<li>1 culleradeta de llevat Royal</li>
<li>1 llimona</li>
<li>150 gr. de mantega</li>
<li>1 tassa de sucre</li>
<li>farina</li>
<li>1/2 tassa d&#8217;oli</li>
</ul>
<p>Elaboració:</p>
<p>Es posa en un recipient la mantega, l&#8217;oli, el suc de taronja, el sucre, el rovell d&#8217;un ou, la llimona ratllada i el llevat.</p>
<p>Es barreja tot i s&#8217;afegeix poc a poc la farina que no s&#8217;enganxi a les mans. Fem una bola i la deixem reposar 30 min.</p>
<p>Es posa farina en un taulell estenem la massa i la deixem de poc gruix, amb tallapastes anem tallant galetes i les anem posant en una safata de forn preparada amb Silpat, amb paper vegetal o quelcom semblant.</p>
<p>Anem fent safates de forn, en surten 3.</p>
<p>Per completar abans de posar-ho al forn les pintem amb el ou restant, i posem sucre en granet per sobre.</p>
<p>Es couen a 180 ºC fins que siguin daurades.</p>
